Culinary Alphabet F

Well it’s taken some time but I have finally fulfilled F is for. And F my dear friends is for flour.
I had high hopes of making onion bhajis with gram flour bought especially for the purpose but when it came to it I’d made so much curry that the last thing we needed was more food.
It’s been strange week at work and also at home as our kitten Buxton vanished on Thursday and hasn’t returned yet. After a day yesterday when Simon and I banged on garage doors, pushed leaflets through doors and put up posters around the village, I hav spent today trying hard to take my mind off everything so I have made Oaty Cranberry cookies.

The mixture was easy to make and they are so tasty that there might not be any left when Simon gets home frm work.

Recipe as follows

75 grams butter
1 tablespoon golden syrup

Melt together in a pan.

Mix together in a bowl.
100 grams plain flour
1 teaspoon of bicarbonate of soda
75 grams Demerara sugar
100 grams porridge oats
2 tablespoons dried cranberries

Mix wet ingediens into dry and stir well. You might be better off using your hands but don’t burn yourself on the hot butter.

Line a baking tray with parchment, roll into 18 balls and space out on your tray or trays. Flatten slightly but not much. Bale for 7 – 15 minutes at 160 degrees depending on your oven.

Cook on a rack to firm up then watch them go.
